Nothing says it’s the holidays like delicious treats. They not only make the perfect gifts for neighbors, coworkers and teachers, they make your home smell delicious!
7 Minute Caramel
1/2 cup unsalted butter
1/2 cup light corn syrup
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1/2 cup sweetened condensed milk
1/8 tsp salt
3/4 tsp vanilla extract
Butter an 8 by 8-inch baking dish. Place butter in a large microwave safe ceramic bowl and heat until melted. Add to the bowl with butter, corn syrup, granulated sugar, brown sugar, sweetened condensed milk and salt and whisk mixture very well. Return to microwave and cook mixture on HIGH power for 6 to 7 minutes. Remove bowl from microwave. BECAREFUL IT’S HOT. Add in vanilla extract and mix well. Pour mixture into prepared baking dish. Place in refrigerator until set, about 20 – 30 minutes. Cut into rectangular pieces and wrap in cut rectangles of wax paper. Secure a few with a festive bow or a ribbon.
100g dark chocolate
100g milk chocolate
100g white chocolate
Toppings of your choice (sprinkles, edible gold stars, delicate violet sugar, edible flowers, grated nuts)
Break the chocolate into small pieces and put in a small bowl over a small pan with some barely simmering water and gently melt the chocolate until silky smooth. Work with one type of chocolate at a time. Spoon small amounts of chocolate gently on the parchment lined baking sheet, then use the back of the spoon to thin it out until you have the size and thickness that you want. Repeat until you have used up all of your chocolate then top with whatever you like! Let sit in the fridge for 5 minutes. Put in a clear plastic and secure with festive ribbons and a snowflake.
Cinnamon Roasted Almonds
1 egg white
1 tsp cold water
4 cups whole almonds
½ cup sugar
¼ tsp salt
½ tsp ground cinnamon
Preheat your oven to 250 degrees. Lightly grease a 10×15-inch pan. Beat your egg white lightly, add water and continue beating until frothy. Add nuts and stir until coated. Mix the sugar, salt and cinnamon and sprinkle over the nuts and toss. Add to your pan and bake for one hour, stirring about every 15 minutes. Bake 1 hour, stirring every 15 minutes until they are golden. Allow to cool completely and package in small mason jars or zipper bags that you festively decorated.
